Zucchini Tzatziki
I know that cucumbers are all the rage at this moment in time, but I want to rebel. I have a lot of zucchini in my garden and if you have an abundance of zucchini, make some zucchini tzatziki.
This recipe is very fluid and almost a no-recipe recipe. Mix, taste and adjust to your liking.
Ingredients
- 1 zucchini, grated
- 1 cup greek yogurt (I prefer full fat)
- A small handful of fresh mint leaves, minced
- 1 tsp dried mint
- 1-2 garlic cloves, minced or grated
- A splash of olive oil
- Salt
Directions
Mix everything together in a bowl and leave in the fridge for about an hour for the flavors to meld. Top with anything you like (I used roasted tomatoes in our photo) or just eat as is with some fresh bread.
