Kale & Parmesan
A quick and delicious side dish that is a hit with my kids! And if the kids love it, you know adults will as well.
Ingredients
- 1 bunch kale, thick stems removed, sliced thinly. (preferably lacinato kale)
- 4 sliced cloves of garlic
- 2 TB olive oil, divided
- ½ cup panko bread crumbs
- ¼ cup grated parmesan cheese
- A pinch of thyme leaves
- 1 TB grated lemon rind
- Salt
Directions
Boil some water in a pot, when boiling, add some salt and the kale. Cook for couple of minutes, until the kale softens slightly. Drain and set aside. Heat up a medium pan, add the panko and a tablespoon of olive oil and mix constantly until the crumbs are golden, about 1 minute. Pour out into a bowl and add the parmesan, thyme, and lemon zest. Toss and taste. Add salt if needed. Wipe pan and return to heat, add olive oil and slivered garlic and cook quickly, until the garlic sizzles. Do not burn the garlic. (The taste of burned garlic is the taste of hell!) add the kale, toss a couple of times until it heats up again. Put kale on a serving platter, sprinkle with panko topping and serve.
