Goes-with-Anything Green Sauce
This vibrant herbal sauce is similar to chimichurri or salsa verde. It's my secret weapon for adding a burst of freshness to all sorts of dishes, from roasted vegetables to fish and chicken.
What makes this sauce so special is its bright, fresh flavor. It's best made in small batches since it doesn't keep for very long. Feel free to get creative with the herbs you use based on what you have on hand. I usually start with a base of parsley and cilantro, and then add a touch of stronger herbs like mint, oregano, or dill.
Goes-with-Anything Green Sauce
Ingredients
- ½ bunch parsley, soft stems and leaves
- ½ bunch cilantro, soft stems and leaves
- 1 sprig mint, leaves
- 1 sprig oregano leaves
- A small bunch chives
- 1 TBS capers
- Juice of ½ lemon, or to taste
- ⅓ cup good olive oil
- Salt
- Optional- a little chopped hot pepper or a pinch of pepper flakes
Chop the herbs and capers as finely as possible with a knife, you want a hand chopped texture, but it should be fine. Mix in the seasoning, add lemon, oil or salt to taste. Let rest for about 10-15 minutes to meld the flavors, then serve.
